Ingredients

  • 1 tablespoon olive oil
  • 2 5.2 oz boursin pucks
  • 1 pint cherry tomatoes sliced in half
  • ½ red onion chopped
  • 3 cloves garlic minced
  • 12 oz pasta cooked according to the directions
  • ½ cup reserved pasta water
  • salt and pepper to taste
  • 2 cups baby spinach
  • fresh basil leaves
  • freshly grated Parmesan cheese

Instructions

  1. Preheat the oven to 425 degrees.
  2. Place fresh cherry tomatoes, red onion, and garlic in a glass baking dish.
  3. Create two wells and place the Boursin pucks in the baking dish.
  4. Drizzle with olive oil then bake in the preheated oven for 25 minutes.
  5. While the Boursin tomato mixture is baking, cook the pasta in a large pot of water according to the package directions—reserve ½ cup of pasta water.
  6. When the Boursin tomato mixture is done, remove it from the oven and smash the tomatoes and cheese with a wooden spoon. Add the reserved half cup pasta water and spinach. Stir until smooth and creamy and until the spinach has started to wilt.
  7. Season with salt and pepper then add the al dente pasta. Mix until well combined. Garnish with fresh basil leaves and parmesan. Serve immediately.
