Ingredients
- 1 tablespoon olive oil
- 2 5.2 oz boursin pucks
- 1 pint cherry tomatoes sliced in half
- ½ red onion chopped
- 3 cloves garlic minced
- 12 oz pasta cooked according to the directions
- ½ cup reserved pasta water
- salt and pepper to taste
- 2 cups baby spinach
- fresh basil leaves
- freshly grated Parmesan cheese

Instructions
- Preheat the oven to 425 degrees.
- Place fresh cherry tomatoes, red onion, and garlic in a glass baking dish.
- Create two wells and place the Boursin pucks in the baking dish.
- Drizzle with olive oil then bake in the preheated oven for 25 minutes.
- While the Boursin tomato mixture is baking, cook the pasta in a large pot of water according to the package directions—reserve ½ cup of pasta water.
- When the Boursin tomato mixture is done, remove it from the oven and smash the tomatoes and cheese with a wooden spoon. Add the reserved half cup pasta water and spinach. Stir until smooth and creamy and until the spinach has started to wilt.
- Season with salt and pepper then add the al dente pasta. Mix until well combined. Garnish with fresh basil leaves and parmesan. Serve immediately.
