Creamy Caesar Beans On Toast

Beans on toast just got a delicious upgrade! Blend up a quick 5-minute Caesar dressing and stir it into white beans and parmesan for the most decadent meal.

Ingredients

  • 2 Tbsp extra virgin olive oil 30 mL
  • 2 Tbsp mayonnaise 30 g
  • 2 Tbsp Dijon mustard 30 g
  • 1 Tbsp lemon juice 15 mL
  • 2 cloves garlic minced
  • 1 oz can White beans like Cannelli or Great Northern beans, 425 g
  • ½ cup fresh grated parmesan avoid pre-grated parmesan, 40 g
  • ¼ tsp ground black pepper
  • To serve: 4 slices sourdough can sub gluten-free

Instructions

  1. Caesar: Add oil, mayo, mustard, lemon juice, and garlic to a blender. Blitz just until combined - do not over blend, which can cause the sauce to break.
  2. Beans: Drain and rinse beans. Stir in the Caesar dressing, parmesan, and black pepper.
  3. Serve: Toast slices of sourdough and spoon Caesar beans on top. Serve immediately.
  4. Optional Level Up: You can optionally place the prepared toast under the oven broiler very briefly to toast the top and make the cheese melty!
