This creamy chicken gnocchi takes chewy gnocchi and combines them with juicy chunks of chicken and a savory sun-dried tomato cream sauce.

Ingredients

  • 2 boneless, skinless chicken breasts cubed
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 1 cup heavy cream room temperature
  • 1 cup low-sodium chicken broth
  • ¼ cup freshly shredded Parmesan cheese
  • ¼ cup sun-dried tomato pesto
  • 1 pound gnocchi (1 package)
  • 2 cups fresh baby spinach

Instructions

  1. Season the chicken with salt and pepper. Add the oil and chicken to a saute pan over medium-high heat. Cook until the chicken reaches an internal temperature of 165°F. Transfer the chicken to a plate.
  2. Stir the heavy cream, chicken broth, parmesan cheese, and pesto together in the pan. Add the gnocchi to the pan and cover. Cook for 5 minutes.
  3. Add the chicken and spinach to the pan and cook for 2 minutes until the spinach is wilted.

Notes

  • Storage: Store creamy chicken gnocchi in an airtight container in the refrigerator for up to 3 days.
