Creamy Chicken Gnocchi Soup

Ingredients

  • 3 tbsp butter
  • 1 tsp olive oil
  • ½ onion diced, sweet yellow
  • 2 celery diced, stalks
  • ½ tsp thyme fresh leaves
  • 1 cup carrot shredded
  • 2 cloves garlic minced
  • 3 tbsp flour
  • 4 cups chicken broth
  • 2 cups half-and-half
  • 1 ½ cups chicken chopped, cooked
  • 16 oz gnocchi package
  • 2 cups baby spinach
  • salt to taste, sea salt and freshly cracked
  • black pepper to taste, sea salt and freshly cracked

Instructions

  1. Heat the butter and oil in a large Dutch oven over medium-high heat. Add the onions, celery, and thyme leaves then cook, stirring often for 7-8 minutes, or until veggies are tender.
  2. Add the shredded carrot and minced garlic then cook, stirring constantly for 30 seconds.
  3. Add the flour and cook, stirring constantly for 1-2 minutes.
  4. Slowly add the chicken broth while stirring then bring to a gentle boil before reducing the heat to low.
  5. Add the half and half, chicken, gnocchi, and cook for 7-10 minutes, stirring occasionally.
  6. Add the spinach and stir to combine. Taste and season with sea salt and freshly cracked pepper, to taste.
  7. Ladle into bowls and serve. Enjoy.
