Creamy Corn and Bacon

Ingredients

  • 6 lices Bacon
  • 1/2 cup chopped onion
  • 2 cloves garlic minced
  • 2 tablespoons flour
  • salt and pepper
  • 1/2 cup heavy whipping cream
  • 8 oz sour cream
  • 3 1/2 cups corn frozen or fresh
  • 1 tablespoon minced parsley

Instructions

  1. Preheat the oven to 375ºF.
  2. Cut the bacon into bite sized pieces. Heat a large skillet over medium-high heat and add the bacon. Cook until crisp, then remove with a slotted spoon to a paper towel lined plate.
  3. Add the onion to the bacon drippings and cook until softened. Add the garlic and cook another minute.
  4. Stir in the flour. Let it cook, stirring, for a couple of minutes. Season with salt and pepper.
  5. Stir in the cream until it is completely combined.
  6. Add the sour cream, corn, parsley, and 3/4 of the cooked bacon. Stir everything together well.
  7. Transfer to a 8x8-inch baking dish and top with the remaining bacon.
  8. Bake in the preheated oven until hot and bubbly, about 25 minutes.
  9. Serve warm, topped with more parsley, if desired.
