Ingredients

  • 2 garlic minced, cloves
  • 2 tablespoon all-purpose flour

  • ½ cup white wine optional, dry

  • ½ lb crab meat picked clean of shells, fresh or canned

  • parsley for garnish, chopped or chives chopped

  1. Melt butter in a large pot over medium heat. Sauté onion and garlic until softened.
  2. Sprinkle in flour and cook, stirring constantly, for 2 minutes.
  3. Gradually whisk in the seafood stock, ensuring no lumps form. Add cream, wine, paprika, and cayenne. Simmer for 10 minutes.
  4. Stir in crab meat and season with salt and pepper. Heat through without boiling.
  5. Ladle into bowls, garnish with parsley or chives, and serve warm.

Notes

  • Make Ahead: Prepare the bisque up to the step before adding the crab meat. Refrigerate for up to 2 days, then reheat and add crab meat before serving.
