Creamy Crock-Pot Potato Soup
This Creamy Crock-Pot Potato Soup is the ultimate comfort food. It's easy to make and perfect for warming up on chilly days.
Ingredients
- 1 yellow onion diced
- 2 cloves garlic crushed
- 1 leek cleaned and chopped, large
- 2 celery chopped, sticks
- 2 carrot chopped, medium
- 30 ounces potato peeled and cubed
- 2 1/2 cups chicken stock
- 1 teaspoon ground coriander
- 2 teaspoons paprika ground
- 1/4 teaspoon black pepper
- 1 teaspoon thyme fresh
- 8 ounces cream cheese low-fat
- Bacon Optional toppings, crispy, shredded

Instructions
- Add the onion, garlic, leek, celery, carrots, and potatoes to the Crock-Pot. Pour in the chicken stock and add the herbs and spices.
- Stir and cover. Cook on low for 5 to 6 hours.
- Once the potatoes fall apart, add the cream cheese and stir. Cover and cook the soup for another 10 minutes. Serve with your favorite toppings and enjoy.
