Ingredients

  • 3 large ripe tomatoes
  • 1 English cucumber
  • ½ white onion thinly sliced
  • fresh herbs for garnish, parsley, basil and/or dill
Dressing
  • ¼ cup mayonnaise
  • 3 tablespoons sour cream
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon granulated sugar
  • ¼ teaspoon garlic powder
  • ½ tablespoon chopped fresh dill
  • ½ teaspoon chopped fresh parsley
  • ½ teaspoon thinly sliced fresh basil leaves
  • ¼ teaspoon seasoned salt
  • ¼ teaspoon black pepper

Instructions

    Cup of Yum
  1. Combine all dressing ingredients in a small bowl. Mix well.
  2. Dice tomatoes and cucumbers into bite sized pieces.
  3. Add vegetables and dressing into a medium sized bowl.
  4. Toss well and season with salt & pepper to taste.
  5. Serve immediately or refrigerate up to 3 days.

Notes

  • To take some of the "bite" out of the onion in this recipe, soak it in cold water while preparing the other ingredients.
  • Upon sitting, the salad will naturally produce liquid as cucumbers and tomatoes contain a lot of water. Drain before serving if needed.
