This Creamy Cucumber Tomato Salad is packed with juicy ripe tomatoes, crisp cucumbers and fresh herbs and all topped off with a delicious creamy dressing.

Ingredients
- 3 large ripe tomatoes
- 1 English cucumber
- ½ white onion thinly sliced
- fresh herbs for garnish, parsley, basil and/or dill
Dressing
- ¼ cup mayonnaise
- 3 tablespoons sour cream
- 1 teaspoon apple cider vinegar
- ½ teaspoon granulated sugar
- ¼ teaspoon garlic powder
- ½ tablespoon chopped fresh dill
- ½ teaspoon chopped fresh parsley
- ½ teaspoon thinly sliced fresh basil leaves
- ¼ teaspoon seasoned salt
- ¼ teaspoon black pepper
Instructions
- Combine all dressing ingredients in a small bowl. Mix well.
- Dice tomatoes and cucumbers into bite sized pieces.
- Add vegetables and dressing into a medium sized bowl.
- Toss well and season with salt & pepper to taste.
- Serve immediately or refrigerate up to 3 days.
Notes
- To take some of the "bite" out of the onion in this recipe, soak it in cold water while preparing the other ingredients.
- Upon sitting, the salad will naturally produce liquid as cucumbers and tomatoes contain a lot of water. Drain before serving if needed.
