Creamy Feta Dressing

Easy feta dressing recipe, made with just 5 ingredients! It takes no effort at all to throw the ingredients into a food processor or blender and whizz until smooth and creamy. This recipe yields about 1 1/2 cups (24 tablespoons).

Ingredients

  • 1/2 cup plain greek yogurt
  • 6 ounces feta cheese
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • 1 clove garlic, grated
  • water, up to ½ cup

Instructions

  1. Into a blender or the bowl of a large food processor fitted with the S-blade, add yogurt, feta, grated garlic, lemon juice, and a generous drizzle (about 3 to 4 tablespoons) good extra virgin olive oil and 2 to 3 tablespoons water. Blend until you reach the consistency of a creamy dressing, adding more water (about 1 tablespoon at a time) as needed.

Notes

  • To Mix it Up: Add 2 tablespoons finely chopped fresh parsley, basil, or mint
  • What feta cheese to use? Blocks of feta cheese in the brine work the best here. Avoid the pre-crumbled variety.

  • How to use feta salad dressing: Try it on some salads, like grilled lettuce salad, corn salad, heirloom tomato salad, tomato and feta salad, cucumber salad, or potato salad.
  • How to store it: It will keep in a tightly closed mason jar in the fridge for up to 4 days.
