Ingredients

  • 3 pounds boneless skinless chicken breasts
  • 1 cup Green enchilada sauce
  • 8 ounces diced green chiles
  • 1 teaspoon ground cumin
  • 2 teaspoons chili powder, green chile powder if you have it
  • 1/2 teaspoon garlic powder
  • Salt and fresh ground black pepper to taste
  • 4 ounces low fat cream cheese, room temperature
  • 1/3 cup plain greek yogurt
  • 16 corn tortillas
  • Crumbled queso fresco avocado, cilantro, and salsa verde for toppings

Instructions

  1. Season the chicken breasts with the spices, salt and pepper. Add them to the slow cooker along with the enchilada sauce and diced green chiles.
  2. Set the slow cooker to low and cook for 3-5 hours depending on how fast your's cooks and the size of the chicken breasts.
  3. Turn the slow cooker off and shred the chicken. Stir in the cream cheese and Greek yogurt.
  4. Serve in warm corn tortillas topped with crumbled queso fresco, diced avocado, and cilantro and salsa verde.
