Ingredients

  • ½ teaspoon dried thyme
  • ½ teaspoon dried basil
  • salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

  1. Heat the Olive Oil:In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic and sauté for 3-4 minutes, until softened.
  2. Add Sundried Tomatoes:Stir in the sundried tomatoes and cook for another 2 minutes, allowing their flavor to infuse the oil.
  3. Add Beans and Broth: Add the drained and rinsed white beans to the pot, followed by the vegetable broth. Stir to combine, scraping up any bits stuck to the bottom of the pot.
  4. Simmer: Bring the mixture to a simmer, and let it cook for about 5 minutes, allowing the flavors to meld together.
  5. Add Cream and Seasoning: Stir in the heavy cream, thyme, basil, salt, and pepper. Continue to cook for 2-3 minutes until the mixture is creamy and heated through.
