Creamy one pot with white beans, spinach and cherry tomatoes
Quick and easy to make one pot that is vegan and fatfree. Made with pre-cooked or canned white beans its ready in under 10 minutes. The sauce is made creamy by blending some white beans with broth. Tomato passata adds depth in the flavours. Add in some spices, spinach and tomatoes... and dinner is served.

Ingredients
- 2½ cups White beans cooked or canned
- 1 cup MM healing broth or water
- 3 large handfuls spinach
- 1 cup cherry tomatoes cut in half
- 1 yellow onion
- 3 cloves garlic
- 3 tbsp tomato passata
- 2 tsp paprika powder
- 1 tsp ground coriander seeds
- ¼ tsp cinnamon
- ¼ tsp ground cumin seeds
Instructions
- Chop the onion finely and bake with just a little bit of water.
- Press the garlic and add.
- Add the tomato passata and the spices.
- Add two cups of beans. Take the other half cup beans and mix withe the broth (or water). Add.
- Add the spinach bit by bit (let it shrink before you add the next).
- Cut the tomatoes in half and add, they just have to warm up a bit.
