CREAMY PARMESAN ITALIAN SAUSAGE DITALINI SOUP

Ingredients

  • 1 pound Italian sausage, removed from casings
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups Chicken Broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup ditalini pasta
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set aside.
  2. In the same pot, add the chopped onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  3. Pour in the chicken broth and bring the mixture to a boil. Add the dried basil and dried oregano.
  4. Stir in the ditalini pasta and cook according to the package instructions until al dente.
  5. Reduce the heat to low and stir in the cooked sausage, heavy cream, and grated Parmesan cheese. Season with salt and pepper to taste.
  6. Simmer the soup for an additional 5-10 minutes, stirring occasionally, until the soup is creamy and well combined.
  7. Garnish with fresh parsley and serve hot.
