- 1 pound Italian sausage, removed from casings
- 1 tablespoon olive oil
- 1 small onion, finely chopped

- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 4 cups Chicken Broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup ditalini pasta
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set aside.
- In the same pot, add the chopped onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Pour in the chicken broth and bring the mixture to a boil. Add the dried basil and dried oregano.
- Stir in the ditalini pasta and cook according to the package instructions until al dente.
- Reduce the heat to low and stir in the cooked sausage, heavy cream, and grated Parmesan cheese. Season with salt and pepper to taste.
- Simmer the soup for an additional 5-10 minutes, stirring occasionally, until the soup is creamy and well combined.
- Garnish with fresh parsley and serve hot.
