Ingredients

  • 2 cups dried orzo pasta
  • 1 tablespoon salted butter
  • 1 clove garlic minced
  • ½ cup heavy cream
  • salt and pepper to taste
  • ¼ cup Parmesan Cheese
  • 12 oz. fresh spinach thinly sliced

Instructions

    Cup of Yum
  1. Cook orzo pasta according to package. Drain and rinse and set to the side.
  2. Return the sauce pan back to the stove top. On medium heat, melt the butter then add in the minced fresh garlic. Stir until fragrant about 1 minute.
  3. Then add in the heavy cream, salt, and pepper. Add the cooked orzo back into the pot, mix well. Then sprinkle with Parmesan cheese and begin stirring in the fresh spinach. Continue to add the spinach until all of it has started to wilt.
  4. Divide and serve immediately.

Notes

  • Turn this side dish into a main dish with chicken and roasted asparagus. I add a green salad as well if I'm entertaining guests.
