Creamy Poppy Seed Dressing

Whip up this Creamy Poppy Seed Dressing to add a sweet-tangy touch to your spring and summer menus. Easy to make and customizable to taste, this dressing is delicious on salads and sandwiches, in coleslaw, or drizzled over fresh fruit.

Ingredients

  • 1 cup good-quality mayonnaise (such as Duke's or Hellmann's)
  • 1/4 cup granulated sugar OR honey
  • 2 teaspoons Dijon mustard
  • 1/4 cup half and half
  • 2-4 tablespoons apple cider vinegar (to taste)
  • 1-2 tablespoons poppy seeds (depending on how textured you want the dressing)

  1. Whisk all of the ingredients together in a bowl until smooth. Or, place all of the ingredients into a lidded mason jar and shake until fully combined.
  2. Chill for at least 1 hour for the flavors to meld. Taste the dressing; it should be sweet-tangy. Stir in additional apple cider vinegar only if needed. (The quantity will depend on the brands of mayo and Dijon mustard you used and your personal preferences. I typically use 2-3 tablespoons of vinegar with the ingredient brands used in my kitchen.)
  3. To store the dressing, refrigerate it in an airtight container for up to 5 days. Makes about 1-1/2 cups of dressing.
