Creamy Ranch Potatoes

These creamy ranch mashed potatoes, with sour cream and fresh herbs, will quickly become your new favorite side dish.

Ingredients

  • 3.5 pounds Russet potatoes
  • 12 tablespoons butter , divided
  • 1 cup sour cream
  • 2 tablespoons dry Ranch seasoning
  • 2 tablespoons fresh chives , minced
  • 2 tablespoons fresh dill , chopped

Instructions

  1. Peel the potatoes and cut them into 1 inch cubes.
  2. Place the potatoes in a large pot, cover with cold water to approximately 2 inches above the potatoes.
  3. Place the pot on high heat and bring to a boil. Boil for approximately 10 minutes or until potatoes are easily pierced with a fork.
  4. Drain the potatoes and return them to the warm pot with the burner on low.
  5. Add 10 tablespoons of the butter, sour cream and the ranch seasoning.
  6. With a potato masher, mash the potatoes just until they are creamy and smooth. You can also use a ricer or large fork for more texture.
  7. Stir in the fresh dill and chives.
  8. Melt the remaining 2 tablespoons of butter in a microwave safe dish or in a small pot on the stove.
  9. Transfer the potatoes to a serving dish and drizzle with melted butter and garnish with additional herbs, if desired.
