Ingredients
Cream Cheese Mixture
- 8 ounces cream cheese
- 1 teaspoon parsley
- ¼ cup Parmesan cheese, grated
- ½ teaspoon kosher salt
Pan-Roasted Tomatoes
- 1 tablespoon olive oil
- 2 packages (10 ounces each) cherry tomatoes, sliced in half lengthwise
- 1 teaspoon kosher salt
- 1 pinch red pepper flakes
- 2 cloves garlic, minced
Toasted French Bread
- 2 loaves (9 inches) French bread, cut half lengthwise and then into 4 to 5-inch sections
- 1 tablespoon olive oil
- ½ teaspoon kosher salt
- ¼ cup Balsamic vinegar, for garnish
- basil, chopped for garnish
Instructions
Cream Cheese Mixture
- In a medium bowl combine cream cheese, parsley, parmesan, and salt. Set aside.

Roasted Tomatoes
- Heat the oil in a large skillet over medium heat.
- Once the oil is sizzling, add tomatoes, salt, and red pepper flakes.
- Continue cooking, stirring frequently, until tomatoes start to shrivel (about 5 minutes).
- Add garlic and cook 1 more minute (or until fragrant).
- Remove the tomato mixture from the skillet. Set aside and tent with aluminum foil to keep warm.
Toasted Bread
- Brush each piece of bread with olive oil and sprinkle each with salt.
- In the same skillet as you roasted the tomatoes, place the pieces of bread cut side down. Cook the bread until browned, pressing lightly into the pan to ensure even cooking.
- Remove the bread from the skillet. Top with the cream cheese mixture and roasted tomatoes.
- Drizzle balsamic vinegar equally over each slice of bread.
- Garnish with chopped basil. Serve immediately.
