Creamy Sausage Tortellini Soup

This cozy bowl of creamy sausage tortellini soup is the perfect warm bowl of comfort food. Great for a quick dinner, this hearty soup is made in less than 30 minutes!

Ingredients

  • 1 pound ground Italian sausage I used mild, remove casing if using links
  • 1 large onion diced, I used yellow onion
  • 3 cloves garlic minced
  • 4 cups chicken broth I used low sodium chicken broth
  • 29 ounces fire-roasted diced tomatoes
  • 1 tablespoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 16 ounces cheese tortellini see notes
  • 1 cup heavy cream see notes
  • paremesan cheese optional garnish
  • basil fresh, optional garnish

Instructions

  1. In a large pot place the Italian sausage. Brown the sausage over medium-high heat breaking it into crumbles with a spatula as you cook. Brown until cooked through and no longer pink, about 8 minutes then drain any excess grease from the meat.
  2. Reduce heat to medium. Add the diced onion to the pot and cook for 2 to 3 minutes until they begin to soften. Add the garlic and cook for about 1 minute or until fragrant.
  3. Pour the chicken broth and tomatoes with the juices into the pot. Add the Italian seasoning, salt and pepper, and fire-roasted diced tomatoes. Bring the entire pot to a boil.
  4. Stir in the tortellini into the pot. Cook for about five minutes or until the tortellini is tender.
  5. Turn the heat down to medium heat. Pour in the heavy cream and cook for an additional 2-3 minutes, or until the soup is heated through. Serve immediately and enjoy!

Notes

  • Garlic
  • You can use 1 1/2 teaspoons of minced garlic to equal 3 cloves.
  • You can also use 3/4 teaspoon garlic powder to equal 3 cloves.
  • Tomatoes
  • 2 14.5 ounce cans of fire-roasted tomatoes equal 19 ounces. Regular diced tomatoes or crushed tomatoes can also be substituted.
  • Tortellini
  • You can use between 16- 20 ounces of fresh tortellini, most large family-sized portions will work or two of the smaller packets also can work.
  • If you have dried tortellini you'll need to boil the tortellini in a separate pot of water according to the package directions before adding it to the soup. Dried tortellini expands and absorbs a lot more liquid during the cooking process and if you put dried tortellini straight into the soup you won't have any soup broth left.
  • Cream
  • Heavy cream or whipping cream can be used interchangeably in this recipe. Half and half can also be used but the soup will be less creamy then if you use heavy cream or whipping cream.
