Creamy Shrimp Scampi with Asparagus and Tomato Recipe

A shrimp scampi sauce which includes asparagus and fresh tomato wedges.

Ingredients

For the Shrimp Scampi Sauce
  • 1 Tablespoon olive oil
  • 4 Tablespoons butter
  • 1.8 Ounces asparagus fresh, cut into two or threes
  • 2 Pieces garlic cloves chopped fine
  • 15 Piece Shrimp
  • ¼ Teaspoon Black Pepper Ground
  • ½ Teaspoon red chili pepper flakes optional
  • ½ Teaspoon salt or to taste
  • 2 Tablespoon parsley fresh fresh
  • ⅓ Cup white wine
  • 2 small tomato
  • lime juice optional

Instructions

  1. Heat up a skillet with olive oil and half of the butter quantity.
  2. Saute asparagus and chopped garlic for 2 minutes.
  3. Then add shrimp and one more tablespoon of butter. Saute over a medium heat setting.
  4. Season with black pepper, pepper flakes (optional), salt, and parsley.
  5. Deglaze with white wine and keep over a medium heat setting. Mix it all up.
  6. Braise over a medium to low heat setting. Add the last tablespoon of butter.
  7. Mix and reduce the sauce a bit to desired consistency.
  8. Stir tomatoes into the pan and serve up hot with lemon juice sprinkled.

  • Use fresh shrimps if possible because they are more flavorful. Add more salt if needed I serve my shrimp butter sauce over angel hair pasta. See post for serving ideas.
