Creamy Sweet Corn Casserole with Jiffy Mix

Cheesy Sweet Corn Casserole with Jiffy Mix is a quick and easy side dish. The sweet, custardy, and creamy corn casserole is made with Jiffy Corn Muffin Mix.

Ingredients

  • 1 can (15 oz) creamed corn
  • 1 can (15 oz) kernel corn, drained
  • ¾ cup sour cream
  • 2 large eggs, beaten
  • ¼ cup butter, melted
  • 1 ½ cups cheddar cheese, shredded, divided
  • 8.5 oz Jiffy Corn mix
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 350 degrees.
  2. Get out and measure all of your ingredients.
  3. Add wet ingredients to a medium-sized bowl and stir to combine. Add all of the ingredients, including 1 cup of the shredded cheddar cheese to the bowl.
  4. Mix until all of the ingredients are completely combined.
  5. Pour the corn casserole mixture into a prepared 9 x 13 baking dish and bake uncovered for 40 minutes.
  6. You can tell that your corn casserole is done when it's lightly brown on top and the center is set -- but still soft.
  7. Top with the remaining ½ cup cheese of shredded cheddar cheese and bake an additional 5 minutes or until the cheese is melted.
  8. Serve warm and enjoy every bite.

Notes

  • Slow Cooker Instructions:
  • Simply prepare your slow cooker with cooking spray. Add casserole mixture and cook on high for 2 ½ hours or on low for 4 hours.
  • All slow cookers work differently so keep a close eye on your casserole to make sure you end up with the best possible result.
