Ingredients
- 1 cup old-fashioned oats
- 2 cups milk any
- Pinch salt
- ½ cup mashed sweet potato
- ¼ teaspoon cinnamon or pumpkin spice
- 2 teaspoons brown sugar optional for topping
Instructions
Prep:
- Scoop ½ cup of sweet potato onto a plate and with the back of the fork, mash it up very well to break up any large pieces. You can also use cooked mashed potatoes or 4oz baby food mashed potatoes.

Cook:
- Add the oats and the milk into a small pot and cook, over medium heat, stirring constantly for a total of 5 minutes*. When the mixture is hot, add the mashed sweet potato and stir it into the oats. Continue mixing the oatmeal for another minute until the oats have absorbed the liquid and the sweet potatoes are warm and fully incorporated into the oatmeal. Sprinkle cinnamon or pumpkin spice over the oatmeal and stir.
Serve:
- Divide the oatmeal into two bowls, sprinkle brown sugar (if using) and additional cinnamon for flavor.
Notes
- *If using instant oats, cooking time will be 2 minutes.
