Creamy Vegan Garlic Sauce blends raw garlic, shallots, a pitted date, rice vinegar, nuts, and seeds in a blender with water until smooth and thick like a smoothie. Seasoned with salt and pepper and optionally fresh herbs, it creates a rich, garlic-forward sauce with a natural sweetness and a creamy texture that can complement various dishes.
Ingredients
- 1-2 garlic to your garlic threshold
- 1 small shallot chopped
- 1 Medjool date pitted, or 1 Tbsp sweetener of choice
- 1 Tablespoon rice vinegar
- ¼ cup nuts choice of sunflower, sesame, pumpkin, cashews, brazil nuts, etc
- ¼ cup seeds choice of sunflower, sesame, pumpkin, cashews, brazil nuts, etc
- water just enough to make creamy
- salt to taste
- black pepper to taste
- fresh herbs handful, of choice, optional
Instructions
- Add garlic, shallot, date, rice vinegar, and nuts to a blender. Slowly add water by the tablespoon as you blend until it's a pourable consistency, like a thick smoothie.
- Season to taste with salt and pepper. Add fresh herbs and blend again, if using.
Notes
- Allow the sauce to rest in the refrigerator for a few hours before serving to mellow the sharp garlic flavor.
- Use the freshest garlic possible to avoid overly pungent or harsh taste.
- Avoid using jarred minced garlic as it reduces freshness and alters the sauce’s flavor.
