Creamy Vegan Garlic Sauce

Creamy Vegan Garlic Sauce blends raw garlic, shallots, a pitted date, rice vinegar, nuts, and seeds in a blender with water until smooth and thick like a smoothie. Seasoned with salt and pepper and optionally fresh herbs, it creates a rich, garlic-forward sauce with a natural sweetness and a creamy texture that can complement various dishes.

Description

This sauce combines fresh garlic and shallots with a sweetener such as a Medjool date and rice vinegar, blended with a choice of nuts and seeds to form a creamy, pourable sauce. Adjusting the water quantity controls thickness, producing a sauce similar to a thick smoothie. The addition of fresh herbs is optional and blends into the sauce for added flavor complexity.

The raw nature of this sauce means the garlic taste can be sharp initially but mellows after refrigeration. The combination of nuts and seeds adds body and a subtle nuttiness. The date balances out the strong garlic with natural sweetness, while rice vinegar contributes mild acidity to brighten the flavor.

This versatile sauce can be used as a dressing, dip, or accompaniment where a creamy, garlicky flavor is desired without dairy or cooked ingredients.

Fresh garlic is crucial for the best flavor, and it’s recommended to avoid jarred minced garlic to preserve the sauce’s clean taste and texture.

Ingredients

Servings
  • 1-2 garlic to your garlic threshold
  • 1 small shallot chopped
  • 1 Medjool date pitted, or 1 Tbsp sweetener of choice
  • 1 Tablespoon rice vinegar
  • ¼ cup nuts choice of sunflower, sesame, pumpkin, cashews, brazil nuts, etc
  • ¼ cup seeds choice of sunflower, sesame, pumpkin, cashews, brazil nuts, etc
  • water just enough to make creamy
  • salt to taste
  • black pepper to taste
  • fresh herbs handful, of choice, optional

Instructions

  1. Add garlic, shallot, date, rice vinegar, and nuts to a blender. Slowly add water by the tablespoon as you blend until it's a pourable consistency, like a thick smoothie.
  2. Season to taste with salt and pepper. Add fresh herbs and blend again, if using.

Notes

  • Allow the sauce to rest in the refrigerator for a few hours before serving to mellow the sharp garlic flavor.
  • Use the freshest garlic possible to avoid overly pungent or harsh taste.
  • Avoid using jarred minced garlic as it reduces freshness and alters the sauce’s flavor.
