Creamy Yellow Bean & Potato Soup
This soup combines yellow wax beans and russet potatoes in a creamy broth enriched with butter, milk, and chicken broth. The soup thickens with cornstarch, resulting in a smooth, hearty texture. Topped with crisp bacon and fresh green onions, it offers a balance of comforting richness and light, fresh garnish.
Ingredients
- 2 tablespoons butter
- 1 cup white onion chopped
- 4 cups yellow wax beans cut in 3
- 4 cups russet potato peeled, chopped, bite sized
- 6 cups chicken broth
- 1 1/2 cups milk
- 3 tablespoons cornstarch
- 2-3 tablespoons green onion chopped, to garnish
- 2-3 tablespoons Bacon cooked, to garnish
- salt to taste
- black pepper to taste
- chives fresh, chopped, to taste
Instructions
- Sautee the onions in butter in the bottom of a large soup pot until tender.
- Add in the beans, potatoes and chicken broth. Bring to a low boil on your stovetop then simmer until the potatoes and beans are tender.
- Whisk the cornstarch into the milk, then whisk into the soup quickly.
- Cook for another 5 minutes until the soup has thickened.
- Ladle into soup bowls and top with green onions and bacon.
