Creamy Yellow Bean & Potato Soup

This soup combines yellow wax beans and russet potatoes in a creamy broth enriched with butter, milk, and chicken broth. The soup thickens with cornstarch, resulting in a smooth, hearty texture. Topped with crisp bacon and fresh green onions, it offers a balance of comforting richness and light, fresh garnish.

Description

The Creamy Yellow Bean & Potato Soup blends tender yellow wax beans and bite-sized russet potato pieces in a buttery sautéed onion base. Simmered in chicken broth, the ingredients become soft and infused with flavor. Thickened with a milk and cornstarch mixture, the soup achieves a velvety consistency that melds the earthy vegetables with the creamy broth. The addition of crispy bacon and green onions as garnishes adds contrasting texture and a savory finish. This soup can be served as a warming meal starter or a standalone light dish, providing richness balanced by fresh herbs and a slight smoky bite from the bacon.
