Ingredients

  • 1 cup white rum
  • 2 cups sweetened condensed milk
  • 2½ cups evaporated milk
  • 1 cup coconut milk
  • A few drops of vanilla extract
  • ½ teaspoon ground cinnamon
  • ½ teaspoon nutmeg , freshly grated
  • zest of a lime

Instructions

  1. In a large bowl, combine the coconut milk and rum, cover with a cloth and let steep at room temperature for 2 hours.
  2. In a large, heavy-bottomed saucepan, combine the evaporated milk, cinnamon, nutmeg and lime zest.
  3. Leave to infuse over low heat for 20 minutes, making sure that the mixture never boils.
  4. Remove the pan from the heat and stir in the mixture of rum and macerated coconut milk, then the vanilla extract. Then pour in the sweetened condensed milk in a stream while whisking continuously.
  5. Let stand for at least 4 hours in a dark, cool place to allow the flavors to blend.
  6. Filter through a fine sieve and serve very chilled, with or without crushed ice.
