Ingredients
- 1 cup white rum
- 2 cups sweetened condensed milk
- 2½ cups evaporated milk
- 1 cup coconut milk
- A few drops of vanilla extract
- ½ teaspoon ground cinnamon
- ½ teaspoon nutmeg , freshly grated
- zest of a lime
Instructions
- In a large bowl, combine the coconut milk and rum, cover with a cloth and let steep at room temperature for 2 hours.
- In a large, heavy-bottomed saucepan, combine the evaporated milk, cinnamon, nutmeg and lime zest.
- Leave to infuse over low heat for 20 minutes, making sure that the mixture never boils.
- Remove the pan from the heat and stir in the mixture of rum and macerated coconut milk, then the vanilla extract. Then pour in the sweetened condensed milk in a stream while whisking continuously.
- Let stand for at least 4 hours in a dark, cool place to allow the flavors to blend.
- Filter through a fine sieve and serve very chilled, with or without crushed ice.
