Crème Brûlée Bubble Tea

A recipe for Crème Brûlée Bubble Tea! This comforting drink pairs tapioca pearls with black tea, lightly whipped cream, and a crisp, caramelized coating.

Ingredients

  • 450 milliliters water boiling, 15 fluid ounces
  • 10 grams black tea Assam variety, 1/4 ounce
  • 160 grams tapioca pearls cooked, 5 1/2 ounces
  • 170 milliliters milk full-cream (whole), 2/3 cup
  • 4 teaspoons brown sugar
  • 200 milliliters cream 7 fluid ounces
  • 2-3 tablespoons powdered sugar icing/confectioners'

Instructions

Prepare the Tea:
    Cup of Yum
  1. In a teapot, pour the boiling water over the black tea and leave to steep for 10 minutes.
  2. Strain and pour the tea into a thermos to keep it warm.
Add Tapioca Pearls and Combine:
  1. In each glass, place tapioca pearls, then pour over the black tea.
  2. In a shaker, combine the milk and a little brown sugar.
  3. Shake two or three times and pour into the glasses.
Add Cream:
  1. Whip the cream for 5 minutes with an electric whisk, add a little icing sugar and stop just before the cream becomes fully whipped. It should be thickened but not stiff.
  2. Add it to each glass and sprinkle with brown sugar.
  3. Pass a crème brûlée torch for 4-5 seconds over the sugar.
Add Straw and Sip Away:
  1. Add the XXL straw and enjoy immediately.
