Crème Brûlée Recipe

This foolproof crème brûlée recipe is made with just 4 simple ingredients. Thicken on the stovetop, bake in the oven, chill, then brûlée!

Ingredients

  • 3 cups heavy whipping cream
  • 1 tablespoon vanilla bean paste
  • 1½ cups granulated sugar divided
  • 6 large egg yolks

  1. Preheat oven to 350°F. Place 8 ramekins into a large cake or roasting pan. Set aside.
  2. In a medium saucepan set over medium-high heat, mix the heavy whipping cream and vanilla bean paste together. When the mixture starts to bubble, remove it from the heat and set it aside to cool for 5 minutes.
  3. In a large mixing bowl, whisk together 1 cup of sugar with the egg yolks. Whisk until the mixture is smooth and pale yellow in color.
  4. Slowly drizzle in the cream, stirring continuously, until it is fully incorporated into the egg mixture.
  5. Divide the mixture between your ramekins, making sure that they are filled until about ¼-inch from the tops.
  6. Fill the large cake or roasting pan with hot water until the waterline is halfway up the sides of the ramekins.
  7. Carefully place it in the oven and bake for 35-40 minutes, or until the crème has set in the center. It should jiggle only slightly when shaken.
  8. Once finished, remove the ramekins from the pan and allow them to cool to room temperature. Then, transfer them to the refrigerator to chill for at least 4 hours.
  9. When ready to serve, sprinkle about 2 tablespoons of sugar over each ramekin and brûlée it with a kitchen torch. Serve immediately.

Notes

  • Storage: Store crème brûlée in an airtight container in the refrigerator for up to 2 days. Wait to brûlée the tops until ready to serve.
