Crisp Bean Burrito

Ingredients

  • ½ cup neutral cooking oil generic cooking oil
  • 5 flour tortillas soft
  • 1 cup refried beans
  • ¼ cup cheese or to taste, shredded

Instructions

  1. Heat oven to 400 degrees F. Set aside a baking sheet.
  2. Heat oil in a medium-sized skillet. Spread about 3 tablespoons of refried beans on each tortilla, sprinkle with cheese, then roll up. Fry in oil for 15-30 seconds on each side.
  3. Place burritos on a baking sheet and bake for 5-7 minutes.
  4. Remove from oven and serve. Dip in enchilada sauce, guacamole, sour cream, or salsa.

Notes

  • Customize the filling by adding shredded meat or vegetables to the beans and cheese.
