Crispy Air Fryer Mashed Potato Balls
Crispy on the outside and creamy cheesy center mashed potato balls. Serve with a dip as an appetizer or enjoy with a main dish as a side dish.

Ingredients
- 2 cups leftover mashed potatoes at room temperature
- 1 cup sharp cheddar cheese shredded
- 1 large egg whisked
- 1 cup panko
- Dipping sauce optional
Instructions
- In a large mixing bowl add leftover mashed potatoes, egg and cheddar cheese. Mix until combined.
- With a cookie scoop place potato balls on a parchment lined baking sheet.
- Place in the refrigerator for 20 minutes or up to an hour.
- Remove potato balls from the refrigerator and roll each ball in panko flakes and place back on the baking sheet.

Air Fryer Instructions
- Spray the insert of the Air fryer with non-stick cooking spray and place the mashed potato balls in a single layer making sure the air can circulate (don't over crowd).
- Turn the air fryer to 375°F and set the timer for 10 minutes. Turn over the potato balls after five minutes. Cook until crispy.
- Place on a cooling rack and serve with dipping sauce or garnish with diced onion, parsley or chives.
Oven Baked Instructions
- Place prepared potato balls on a parchment line baking sheet.
- Put prepared potatoes in the oven at 400°F for 10 minutes or until crispy. Turn balls once.

Notes
- My potatoes are leftovers from this Instant Pot Mashed Potatoes Recipe. They are already well seasoned with butter, sour cream, salt & pepper and garlic powder.
- Warm mashed potatoes slightly in the microwave or on the stovetop if potatoes are right out of the refrigerator.
- For extra crispy potato balls after coating the potatoes in panko breadcrumbs lightly spray with cooking spray, then roll again in panko.
- Experiment with different cheeses, herbs and spices to get the flavors you like best.
- To make sure that you get a crispy exterior be careful to not overcrowd your air fryer basket. If you are using a smaller air fryer you will need to make them in batches.
