Crispy Beer Battered Chicken

A light, airy, and flavorful twist on traditional fried chicken that uses beer and pancake mix for the perfect crispy coating.

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons pancake mix
  • 1/4 teaspoon MSG
  • 1/4 teaspoon curry powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon celery salt
  • salt and pepper to taste
  • 1 whole chicken about 4 pounds, broken down into pieces
  • 2 cups beer
  • vegetable oil for frying

Instructions

    Cup of Yum
  1. Combine all of the dry ingredients in a bowl and mix well.
  2. Dip the chicken into the beer and then into the flour mixture.
  3. Cook uncovered in a deep fryer at 350°F, turning once during the cooking process.
  4. Remove the chicken and let the excess oil drain on paper towels.

Notes

  • If you don't want to cut up a whole chicken, you can use chicken breasts or tenders.
