A light, airy, and flavorful twist on traditional fried chicken that uses beer and pancake mix for the perfect crispy coating.

Ingredients
- 2 cups all-purpose flour
- 2 tablespoons pancake mix
- 1/4 teaspoon MSG
- 1/4 teaspoon curry powder
- 1/4 teaspoon paprika
- 1/4 teaspoon celery salt
- salt and pepper to taste
- 1 whole chicken about 4 pounds, broken down into pieces
- 2 cups beer
- vegetable oil for frying
Instructions
- Combine all of the dry ingredients in a bowl and mix well.
- Dip the chicken into the beer and then into the flour mixture.
- Cook uncovered in a deep fryer at 350°F, turning once during the cooking process.
- Remove the chicken and let the excess oil drain on paper towels.
Notes
- If you don't want to cut up a whole chicken, you can use chicken breasts or tenders.
