Crispy Buffalo Wing Smashed Potatoes

These crispy buffalo smashed potatoes are out of this world! My crispy smashed potatoes are topped with melty blue cheese, drizzled with buffalo wing sauce and sprinkled with tons of cilantro and green onions. A perfect game day snack or side dish!

Ingredients

  • 2 pounds baby Yukon Gold potatoes
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon freshly cracked black pepper
  • ½ teaspoon garlic powder
  • ½ cup crumbled blue cheese
  • ⅓ cup buffalo wing sauce
  • ¼ cup chopped green onions
  • ¼ cup chopped fresh cilantro
  • ranch dressing, for serving

Instructions

  1. Place the potatoes in a large pot and fill it with cold water. Bring the water to a boil. Simmer the potatoes until they are just barely fork tender. Strain the potatoes and let them cool slightly.
  2. Preheat the oven to 450 degrees F.
  3. Brush a baking sheet with 1 ½ tablespoons of olive oil. Place the potatoes on the sheet. Use your hand or the bottom of a glass to smash them once, trying to keep them in one piece.
  4. Drizzle the remaining olive oil over the potatoes. Sprinkle the potatoes with salt, pepper and garlic powder.
  5. Place the sheet in the oven and roast the potatoes for 25 to 30 minutes, until golden and crispy.
  6. Remove the pan and top each potato with some of the blue cheese. Return the pan to the oven for 5 minutes, until the cheese is melted.
  7. Remove the pan and drizzle with the buffalo wing sauce, top with the green onions and fresh cilantro. You can add more crumbled blue cheese if you’d like! Serve immediately!
