I loved how the Ritz crackers gave it a delicious crunch and the cream sauce on top was amazing. This is definitely a meal that will please the family and everyone will love.

Ingredients

Crispy Cheddar Chicken
  • 4 chicken breast about 4 pounds, large
  • 2 leeves Ritz crackers
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • ½ cup milk whole
  • 3 cups cheddar cheese grated
  • 1 teaspoon parsley dried
Cream Sauce:
  • 1 (10-ounce) cream of chicken soup canned
  • 2 tablespoons sour cream
  • 2 tablespoons butter unsalted

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and spray a 9x13-inch baking dish with cooking spray.
  2. Cut each chicken breast into 3 equal pieces and set aside. In a food processor pulse the the Ritz crackers into crumbs.
  3. place the cracker crumbs into a bowl, the milk into a separate bowl, and the cheese into a third bowl. Whisk the salt and pepper into the crumbs.
  4. Dip chicken pieces first in the milk, then roll in the cheese, pressing the cheese into the chicken breast, and lastly roll the chicken into the cracker crumbs.
  5. Lay the breaded chicken into the prepared baking dish. Sprinkle the top of the coated chicken with the dried parsley.
  6. Cover the pan with tin foil and bake for 30-35 minutes, until the chicken temps out to 165 degrees Fahrenheit.
  7. While the chicken is baking, in a medium saucepan over medium heat, whisk together the cream of chicken soup, butter, and sour cream until heated through.
  8. Once the chicken is done, serve the cream sauce over the chicken and enjoy!
