Crispy Cheese Sandwich

Ingredients

  • 1 loaf sourdough bread, sliced into 8 slices
  • ½ cup (1 stick / 113 g) butter, divided
  • 3 cups (339 g) mild cheddar cheese, grated and divided
  • 3 cups (339 g) white cheddar cheese, grated and divided

Instructions

  1. Butter slices of bread on both sides.
  2. In a pan over low heat, add a slice of bread, ½ cup of both kinds of cheese, and top with another slice of bread.
  3. Cook over low heat about 3 minutes on each side, using a weight to hold the sandwich down.
  4. Remove the sandwich from the pan.
  5. Grate more cheese to add to the pan (about 2 tablespoons of each kind of cheese per side) and set the sandwich back down on top of the cheese.
  6. Slowly remove from the pan creating a crispy cheese crust.
  7. Repeat with the other side.
