Ingredients
Wet Ingredients
- 2 boneless skinless chicken breasts
- 2 cups milk or buttermilk
- 2 teaspoons salt
- 1 large egg lightly beaten
Dredging Mixture
- 1 1/2 cups all-purpose flour
- 2 tablespoons powdered sugar
- 2 teaspoons paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon baking soda
For Frying
- 4 cups vegetable oil 2-4 inches
Sandwich
- 4 hamburger buns
- 4 lettuce leaves
- 1 medium sliced tomato
- 16 sliced dill pickles
- 4 lices cheddar cheese or flavor of choice
Instructions
- Cut chicken breasts horizontally so you get 2 pieces from one breast. Place between 2 sheets of plastic wrap and pound to an even flatness that is about 3/4 inch thick.
- In a large mixing bowl, whisk together milk, egg and salt. Add in chicken pieces and toss to combine. Cover and refrigerate 30 minutes or up to 2 hours.
- When ready to cook, pour enough oil into a large skillet to cover the bottom with 2 inches of oil. Heat oil to 350 degrees Fahrenheit and monitor temperature.
- Make the dredging mixture by combining flour, powdered sugar, paprika, salt, black pepper, and baking soda in a shallow bowl or gallon-sized resealable plastic bag.
- Remove the chicken breast pieces from the fridge. Remove chicken pieces from milk mixture and tap off excess liquids.
- Working in small batches, toss the chicken breast pieces in the dredging mixture to coat. Place on a wire rack until ready to fry.
- Fry chicken in oil in small batches for 4 to 5 minutes, until chicken reaches an internal temperature of 165 degrees Fahrenheit. Use a slotted spoon or tongs to remove chicken from oil and transfer to a paper towel lined plate to drain.
- Assemble the sandwich by smearing 1-2 tablespoons of the sauce on a toasted bun. Layer it with lettuce, pickles, tomatoes and the fried chicken. Sandwich it with the top bun that also has a smear of the sauce and enjoy!

Notes
- 1/2 cup mayonnaise
- 1/4 cup bbq sauce
- 2 tablespoons ground mustard
- 1-2 tablespoons honey depends on how sweet you like it
- 1 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Combine in a bowl and mix together, Let sit for 20 minutes to let flavors really develop.
