Instructions

  1. Cut chicken breasts horizontally so you get 2 pieces from one breast. Place between 2 sheets of plastic wrap and pound to an even flatness that is about 3/4 inch thick.
  2. In a large mixing bowl, whisk together milk, egg and salt. Add in chicken pieces and toss to combine. Cover and refrigerate 30 minutes or up to 2 hours.
  3. When ready to cook, pour enough oil into a large skillet to cover the bottom with 2 inches of oil. Heat oil to 350 degrees Fahrenheit and monitor temperature.
  4. Make the dredging mixture by combining flour, powdered sugar, paprika, salt, black pepper, and baking soda in a shallow bowl or gallon-sized resealable plastic bag.
  5. Remove the chicken breast pieces from the fridge. Remove chicken pieces from milk mixture and tap off excess liquids.
  6. Working in small batches, toss the chicken breast pieces in the dredging mixture to coat. Place on a wire rack until ready to fry.
  7. Fry chicken in oil in small batches for 4 to 5 minutes, until chicken reaches an internal temperature of 165 degrees Fahrenheit. Use a slotted spoon or tongs to remove chicken from oil and transfer to a paper towel lined plate to drain.
  8. Assemble the sandwich by smearing 1-2 tablespoons of the sauce on a toasted bun. Layer it with lettuce, pickles, tomatoes and the fried chicken. Sandwich it with the top bun that also has a smear of the sauce and enjoy!
