Crispy Chickpeas with Whipped Yogurt and Rice

Easy, crispy chickpeas are so quick to bake up or put in the Airfryer. In this recipe I served them with a healthy rice, and creamy whipped yogurt.

Ingredients

Servings
  • 1 RightRice Cilantro Lime package

Crispy Chickpeas:

  • 1- 550 ml chickpeas washed, strained, and dried, canned
  • 2 tbsp. olive oil
  • lemon juice of 1
  • 1 tbsp. garlic powder
  • 1 tbsp. umami powder
  • 1 tsp. paprika
  • 1 tsp. oregano
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • red chili flakes dash

Creamy Whipped Yoghurt:

  • 1 cup yogurt or 1/2 cup yogurt + 1/2 cup cream cheese
  • 1 tbsp. lemon juice
  • 1 tbsp. olive oil
  • 1/2 tsp. salt sea salt
  • 1/4 tsp. black pepper cracked
  • 1/4 cup mint chopped

Toppings:

  • lemon or lime; extra
  • mint fresh
  • hot sauce optional

Instructions

  1. Preheat the oven to 425F and line a baking sheet with parchment paper.
  2. To a large bowl, combine the chickpea ingredients and stir well until every chickpea is well coated.
  3. Transfer the uncooked, dressed chickpeas to the lined baking sheet and cook for 25 minutes, stirring and checking often to avoid burning.
  4. While the chickpeas cook, prepare the @RightRice as per package instructions.
  5. To make the whipped yogurt, add all of the ingredients to a deep bowl, and stir until well combined.
  6. Once the chickpeas are cooked and ready, you can begin portioning the @RightRice into bowls (serves 2), then add the whipped yoghurt, chickpeas, and any additional toppings as desired.

Notes

  • Swap the yogurt with your favorite dairy-free substitute.
  • This dish is great to make in larger quantity on a platter- serve it family style at a potluck! It'll be a huge hit!
  • Add any extra herbs and spices you wish to the crispy chickpeas! Extra deliciousness!
  • Store this ingredients of this rice dish seperately in airtight containers in the fridge for 3 - 5 days, and combine when ready to eat! YUM!
