Crispy Cod Sandwich

Ingredients

  • 2 - 8 oz cod filets
  • 1 tablespoon olive oil
  • 2 tablespoon grated Parmesan cheese
  • 2 tablespoon Italian style breadcrumbs
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon pepper
  • 4 sub buns

  • lettuce
  • tomatoes

Instructions

  1. Preheat oven to 400ºF.
  2. Blot cod filets with paper towel to absorb the moisture.
  3. In a small mixing bowl, combine olive oil, parmesan cheese, breadcrumbs, salt, garlic powder, and pepper.
  4. Press mixture onto both sides of the filets.
  5. Place breaded filets on a greased baking sheet.
  6. Bake for 18-20 minutes or until cod flakes apart with a fork.
  7. Spread tartar sauce on buns. Add lettuce and tomatoes.
  8. Place half of a filet on each bun to complete your sandwich.

Notes

  • Let it rest: Allow the cod to rest for about 5 minutes before serving. This ensures the juiciest result.
  • Use a wire rack: To ensure the cooked cod doesn’t become soggy, place them on a cool rack so the breading stays crispy.
  • Leave enough space when baking: You don’t want to overcrowd the baking sheet — especially if you are making extra fish. If the filets are too close together they will steam and not get crispy.
