Ingredients

  • ¼ cup crumbled Feta cheese
  • 1 tablespoon harissa or pesto
  • 1 large egg
  • 1 tablespoon fresh dill or basil chopped
  • Avocado oil cooking spray
  • 1 small tortilla

Instructions

    Cup of Yum
  1. Heat a small skillet over medium heat, add the feta cheese around the outside circle of the pan. Allow the feta cheese to melt for 2-3 minutes.
  2. Add the harissa or pesto in the middle of the pan and gently crack an egg in the center of the pan over the harissa. Allow the egg to cook to your liking, 3-5 minutes.
  3. When the egg is cooked and the cheese has created a golden brown crust, sprinkle it with fresh dill or basil. Then gently remove from the pan using a spatula and set on a plate.
