Crispy Fried Parmesan Asparagus

Crispy Fried Parmesan Asparagus or Italian Asparagus is a great vegetable side or appetizer with a crispy, crunchy, golden brown parmesan crusted coating!

Ingredients

  • 1 pound asparagus
  • ⅓ cup all-purpose flour
  • 1 teaspoon garlic salt
  • ½ cup breadcrumbs
  • ¼ cup Parmesan cheese grated more if needed
  • 1-2 tablespoons parsley, dried more or less to taste
  • 1 large egg, beaten
  • ¼ cup white wine
  • ¼ cup olive or another vegetable oil
  • ¼ cup butter

Instructions

  1. Prepare three work areas.
  2. The first plate should have the flour and garlic salt. 
  3. The second should have bread crumbs, parmesan cheese and parsley.
  4. The last should have the egg and wine. 
  5. Wash asparagus and break or cut off the tough ends. Leave the asparagus damp.
  6. Toss until totally coated in the flour and garlic salt.
  7. Next, gently coat with the egg and wine mixture. 
  8. Last coat in the breadcrumb mixture.
To Fry

  1. Refrigerate to chill for at least 30 minutes. This helps the coating stick to the asparagus.
  2. Melt oil and butter in your skillet, over medium heat, when ready to prepare. Using oil will help prevent your butter from burning while the butter adds some more flavor.
  3. Saute the asparagus until crispy and golden brown. Serve hot and enjoy!
To Bake
  1. Arrange your oven rack to be set at middle or one less than middle.
  2. Set your oven to 425 degrees.
  3. Prepare a rimmed baking sheet with tinfoil and a wire rack coated with cooking spray. 
  4. Arrange asparagus in a row leaving a little bit of space between each piece.
  5. Bake for 10-13 minutes or until asparagus are crispy and golden.
  6. Serve immediately and enjoy.
