Ingredients
- 2 boneless skinless chicken breasts, halved
- 8 tablespoons unsalted butter, divided
- ½ cup Italian bread crumbs
- ½ cup plus 1 tablespoon grated parmesan cheese, divided
- 1 teaspoon garlic powder
- ¼ cup all-purpose flour
- 1 bunch of asparagus, sliced into thirds
- 2 teaspoons minced garlic
Instructions
- In a large skillet over medium heat melt 2 tablespoons butter.
- Create the breading station by adding 4 tablespoons of melted butter in a shallow dish. In another shallow dish combine the bread crumbs, parmesan cheese, garlic powder, and flour.
- Dip the chicken in the butter then coat it in the breadcrumb mixture. Place the breading chicken in the skillet.
- Cook on each side for about 3-4 minutes until the outside is crispy and the chicken is cooked throughout. Set aside on plate.
- Add the remaining 2 tablespoons of butter into the skillet. Add the garlic and cook for 1 minute.
- Add the asparagus to the skillet and cook until tender. Salt and pepper to taste and add the parmesan cheese.
- Return the cooked chicken to the skillet and heat through. Serve and enjoy!
