Crispy Hash Brown Patties are made from parboiled russet potatoes combined with eggs, flour, and salt, shaped into patties and frozen briefly before frying to a golden-brown crisp. The result is a crunchy exterior with a tender, soft potato interior, offering a satisfying texture contrast.

Description

This recipe starts by partially cooking peeled russet potatoes in boiling salted water to soften them without fully cooking. Once cooled, the potatoes are grated and mixed with eggs, flour, and kosher salt to bind the mixture. Forming the mixture into equal-sized patties ensures even cooking and portioning.

Crucially, the patties are frozen for 45 minutes to an hour before frying. This step helps the patties hold their shape during frying and promotes even browning. When fried in hot oil at 350°F, the hash browns develop a deep golden, crispy crust while the inside remains tender and moist.

These patties work well as a breakfast side or snack, providing a familiar potato flavor with a crunchy texture. Cooling the potato before grating and freezing the formed patties are practical steps that improve the final product.

  • 4 large russet potato peeled, washed, and cut in half horizontally
  • 2 large egg room temperature
  • ¼ cup all-purpose flour 31g
  • 1 teaspoon kosher salt
  • 1 cup oil for frying, 218 g

Instructions

  1. Line a baking sheet with parchment paper. Set aside.
  2. Bring a medium pot of salted water to a boil.
  3. Add potatoes and parboil (partially cook) for 6 minutes. (The potatoes won't be cooked through.)
  4. Allow potatoes to cool slightly, or enough to comfortably hold. Then, grate the potatoes using a box grater.
  5. In a large bowl, add grated potatoes, eggs, flour, and salt. Mix well.
  6. Form into 8 equal patties (about 3-4 ounces each). We made our patties into rounded rectangle shapes; you could make them the shape of your choice.
  7. Place the patties on the lined baking sheet and freeze for 45 minutes to an hour. (Don't skip this step!)
  8. When ready, heat oil to 350°F in a large skillet over medium-high heat.
  9. Add 1-3 patties at a time and cook 3-5 minutes, or until browned. Flip the patties and cook another 3-5 minutes. Place hash brown patties on a paper towel-lined baking sheet to soak up excess oil.
  10. Repeat with the remaining patties, making sure the oil is at 350°F for each batch.
  11. Serve patties hot.
