Crispy Herbed Potatoes

Delicious crispy, crunchy, buttery herbed potatoes that make the perfect side dish for any meal!

Ingredients

  • 1-2 pounds red or fingerling potatoes I usually cook 2 per person if they are smaller
  • butter olive oil, or other fat that wont smoke
  • salt
  • pepper
  • herbs de provence rosemary or other herbs of choice

Instructions

  1. Wash your potatoes well.
  2. In a large pot, boil water. Add potatoes and parboil - cook just until soft to the touch, about 8 minutes.
  3. Drain well, then cut them into small chunks- about 1 1/2".
  4. Rub a pat of butter on the bottom of a baking sheet, making sure it coats all over. If you aren't using butter, do the same with coconut oil, or even olive oil- but butter does work the best to keep the potatoes from sticking.
  5. Drizzle with olive oil and sprinkle on salt, pepper and herbs.
  6. Bake at 400 for 40 minutes, and then set oven to broil.
  7. Let potatoes crisp, stir them around a bit, and crisp some more so it is fairly even on all sides. The broiler will be giving you the potato "crisp", so its important not to skip this part- it will make them crunchy and tasty!
  8. Serve and enjoy!!
