Crispy Parmesan Roasted Potatoes

Parmesan roasted potatoes have a tender, creamy center hidden inside a golden, cheesy exterior. These crispy spuds make a great side dish!

Ingredients

  • 1 lb small yellow potatoes rinsed
  • ¼ cup unsalted butter melted (or ghee)
  • ½ cup Parmesan Cheese grated
  • 1 tsp garlic powder
  • 1/2 tsp sweet paprika
  • 1/2 tsp ground black pepper
  • 1/4 cup parsley chopped (for garnish)

Instructions

  1. Preheat oven to 400°F. Wash the potatoes then cut them into halves.
  2. Pour the melted butter (or ghee) on bottom of a rimmed 9×13" baking pan, evenly coat the bottom.
  3. Sprinkle parmesan cheese on top along with the garlic powder, paprika and black pepper.
  4. Line your potatoes up in an even layer on top and bake on the middle rack for 30 minutes.
  5. Remove from oven and let sit for 10 minutes before removing from baking pan and serving. This allows the cheese to cool and slightly harden. Use a spatula to remove potatoes to serving dish in pieces. Sprinkle with chopped parsley and serve.
