Crispy peanut butter cereal gives these peanut butter banana gluten free waffles a delicious twist! They're great for an easy breakfast or weekend brunch!

Ingredients

  • 1 ½ cups gluten free flour
  • 1 tbsp granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 2 large eggs
  • 1 ¼ cup soy milk
  • 2 tbsp honey
  • 1 tbsp unsalted butter melted
  • 1 banana mashed
  • ¼ cup peanut butter
  • ½ cup gluten free peanut butter puffs cereal

Instructions

  1. Combine the flour, sugar, baking powder, salt and cinnamon in a medium mixing bowl.
  2. In a large mixing bowl combine the eggs, milk and honey.
  3. Add the melted butter.
  4. Add the mashed banana and peanut butter.
  5. Whisk together, then add the flour mixture.
  6. Combine well, then add the peanut butter puffs cereal.
  7. Mix well, then spoon the mixture into a waffle iron and cook.
