Ingredients
- 1 lb parsnips peeled and sliced long ways
- 1 tablespoon olive oil
- Seasoned salt and pepper to taste
- ½ teaspoon garlic powder
- Parmesan Cheese
- Fresh herbs of your choice: parsley, dill
Instructions
- In a large bowl add parsnips and olive oil. Stir until all the parsnips are evenly coated with the oil.
- Add salt and pepper to taste and garlic powder. Stir until well combined.
- Spray the air fryer basket with cooking spray to prevent sticking.
- Add the seasoned parsnips to the air fryer basket in a single layer and air fry at 400 degrees for 12 minutes or until golden brown on the ends. Shake the basket a few times while the parsnips are cooking.
- Return the cooked parsnips to the bowl and top with parmesan cheese and your favorite fresh herbs. Toss until well combined. Serve immediately.

Notes
- Storage & Reheating: Store in the refrigerator for up to 4 days and store in the freezer for up to 3 months. Reheat in the air fryer at 375 degrees for 3-5 minutes until warmed and crisped up.
- Tips:
- Slice parsnips evenly
- Lightly spray the air fryer pan to prevent sticking, and shake the basket occasionally for even cooking and perfect crispiness.
- If using a smaller air fryer, cook in batches for crispier results.
